
Ok, so it’s not technically buttercream! But if you’ve ever wanted a Raw, Vegan alternative to buttercream for your treats then this one is a beauty!

There is a lovely tangy lemon taste to this frosting, but you can easily substitute the lemon juice and rind with other fruits to achieve different flavours (and colours)! I might give Strawberry flavour a go next!

You will need:
- 1 Cup Cashew Nuts (Soaked in water for an hour)
- 3 Tbsp of Coconut Oil / Coconut Butter
- 3 Tbsp Agave Syrup
- 2 Tbsp Freshly Squeezed Lemon Juice
- Grated Zest of 1 Lemon

Firstly process your Cashew Nuts, the finer you process them the better as this will mean a smoother mixture!

Next add the Coconut Oil (or sometimes called Coconut Butter). I use Viridian Nutrition Coconut Oil and find it perfect to work with!

It almost look like a cross between Ice and Ice Cream!

Then add the fresh Lemon Juice and Zest.

Finally add the Agave Syrup then use a hand mixer or your processor and mix until smooth.
It’s really that simple! Then simply put into a piping bag or use as a filling or spread! I used mine for these super cute Raw Santa Hat Brownies! You can see the tutorial here.
