These Raw, Vegan and very tasty Christmas Puddings are perfect as a Healthy Alternative to a Christmas Treat! The use of Nutmeg & Cinnamon gives it such a great flavour!
I would recommend making these a few days in advance if you can, to let the flavours really develop!
Makes 12 Mini Christmas Puddings
You will need:
- 1/4 Cup Cranberries (Fresh or Dried)
- 1 Cup Hazelnuts (Soaked)
- 1/4 Cup Sultanas
- 1 Cup Walnuts
- 1 1/4 Cup Dates (Soaked)
- 1/2 Cup Raw Cacao Powder
- 2 x Grated Orange Zests
- 1/2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1 Bowl of Healthy Buttercream (Follow link to see Recipe)
- Extra Cranberries to decorate
Start by chopping / processing you nuts, here are the Raw Hazelnuts – just looking at them remind me of Christmas.
All chopped and ready to go!
Do the same to your Walnuts!
Then process your dates and add them to the Nut Mixture.
Then add and the Raw Cacao Powder.
And the Cinnamon and Nutmeg and give it a good mix.
Next add the Grated Orange Zest…
…And finally the Cranberries!
Give a really good mix to finish, it should look like the consistency above!
Next grab a small handful of mixture and roll into a ball.
Place the ball onto a plate and press down until there is a flat bottom (like an actual Christmas Pudding has).
Make a batch of Healthy Buttercream using this recipe from my earlier post. Then take a teaspoon full and spread it over the Christmas Pudding shaping and smoothing into your desired shape.
Finally add a few extra Cranberries on top to decorate, and there you have it! A Raw Vegan Gluten Free Christmas Pudding (that actually tastes good)!
